About the role

We are seeking an experienced Senior Cook to join our dynamic culinary team at lettuce havemore joy in Denpasar, Bali. This is a full-time position that plays a crucial role in maintaining the highest standards of food preparation, quality and presentation across our kitchen operations. As a Senior Cook, you will be instrumental in leading kitchen activities, ensuring consistency in our culinary offerings, and mentoring junior kitchen staff. Your expertise and leadership will directly contribute to our reputation for excellence in hospitality and the memorable dining experiences we provide to our guests.

Key responsibilities

• Prepare and cook a variety of dishes according to established recipes, plating standards and presentation guidelines

• Maintain exceptional food quality, portion control and consistency across all menu items

• Oversee and manage food preparation areas, ensuring compliance with health, safety and hygiene standards

• Train, supervise and mentor junior kitchen staff, providing guidance on cooking techniques and food safety protocols

• Monitor and manage kitchen inventory, food stocks and ordering requirements to minimise waste

• Collaborate with the Head Chef and kitchen team to develop new menu items and seasonal specials

• Maintain equipment in good working order and report any maintenance issues promptly

• Ensure timely preparation and delivery of dishes during service, managing workflow efficiently

• Uphold food safety regulations, HACCP procedures and all relevant local and international standards

• Support kitchen operations during peak service times and special events

What we're looking for

• Minimum 5+ years of professional cooking experience in a hospitality or hotel environment

• Proven experience as a Senior Cook or similar supervisory kitchen role

• Strong knowledge of food preparation techniques, cooking methods and international cuisine

• Expertise in food safety, hygiene standards and HACCP compliance

• Proficiency in kitchen equipment operation and maintenance

• Excellent leadership and team management skills with the ability to mentor and develop staff

• Strong organisational skills with the ability to manage multiple tasks and work under pressure

• Creativity and passion for culinary excellence and menu innovation

• Flexibility to work varying shifts, including evenings, weekends and public holidays

• Relevant culinary qualifications or certification (advantageous)

• Experience in Balinese, Asian or fusion cuisine is highly desirable
