About the role
The Forge Gastropub Bali is seeking an experienced Butcher to join our culinary team. This is a full-time position based in Badung, Bali. As Butcher, you will be responsible for the expert preparation, processing, and portioning of high-quality meats to support our gastropub's premium dining offerings. This role is essential to maintaining our commitment to quality ingredients and exceptional food standards that define The Forge Gastropub Bali's reputation.
Key responsibilities
Receiving, inspecting and storing meat products in accordance with food safety and hygiene standards
Butchering, deboning and portioning various cuts of meat to precise specifications
Preparing meat for cooking whilst maintaining optimal presentation and quality
Maintaining sharp and properly sanitised butchery tools and equipment
Monitoring meat inventory levels and communicating stock requirements to management
Following all food safety regulations and maintaining a clean, organised butchery workspace
Collaborating with kitchen staff and management to ensure meat quality meets our high standards
Waste management and utilisation of by-products in an efficient and sustainable manner
What we're looking for
Proven experience as a Butcher or in meat preparation and processing within a professional kitchen environment
In-depth knowledge of various meat types, cuts and butchering techniques
Strong understanding of food safety, hygiene and sanitation practices
Proficiency with butchery tools and equipment, maintaining them safely and effectively
Excellent attention to detail and consistency in portion control and presentation
Physical capability to perform repetitive tasks and work in a cool environment
Strong organisational and inventory management skills
Ability to work efficiently within a team-oriented kitchen environment
Relevant certifications in food safety or butchery are desirable
