Role Summary
Responsible for overseeing pastry production, maintaining product consistency, and supporting R&D development across outlets and wholesale production. This role ensures all pastry items meet brand standards in taste, quality, and presentation.
Job Descriptions
Production & Quality Control
Execute daily pastry production (bread, cakes, cookies, laminated dough, etc.)
Ensure consistency in taste, texture, and presentation across all batches
Follow and maintain standardized recipes (grams, process, timing)
Monitor product freshness and minimize waste
R&D / Product Development
Assist in developing new menu items (seasonal / trend-based)
Improve existing recipes (cost, shelf life, efficiency)
Work closely with owner/management on product direction
Test and standardize new recipes before launch
Kitchen Operations
Supervise junior pastry staff / bakers
Ensure smooth workflow in pastry section
Maintain cleanliness and food safety standards (HACCP basic)
Control stock usage and report shortages
Cost & Efficiency
Maintain food cost targets
Optimize ingredient usage and reduce wastage
Assist in inventory control and ordering
Requirements
Minimum 2–4 years experience in pastry / bakery
Experience with:
Laminated dough (croissant, danish)
Bread basics (sourdough is a plus for Dom’s)
Pastry production (cookies, cakes, fillings, cream)
Good understanding of scaling production
Able to follow precise measurements (gram-based recipes)
Basic leadership / team supervision skills
Able to work in fast-paced environment
