Job Summary
We are seeking a creative and commercially minded Product Development Pastry Chef to lead the development of innovative bakery, cookie, snack, and dessert products for retail and e-commerce channels.
The successful candidate will be responsible for ideating, testing, standardizing, and launching profitable food products that align with market trends and operational capabilities.
This role combines culinary creativity with commercial discipline and will play a key role in building ourprivate label food portfolio.
Key Responsibilities
Product Development
Develop new cookie, snack, bakery, and dessert products.
Research food trends and consumer preferences.
Create innovative concepts suitable for retail and e-commerce.
Conduct product trials and tasting sessions.
Improve existing products based on customer feedback.
Recipe Standardization
Create standardized recipes and SOPs.
Define production methods and batch sizes.
Ensure consistency across all production runs.
Develop quality control checkpoints.
Costing & Profitability
Calculate food costs for all products.
Ensure products meet target gross profit requirements.
Identify alternative ingredients to improve margins.
Reduce waste through recipe optimization.
Production Setup
Design production workflow for small-batch manufacturing.
Recommend equipment requirements.
Optimize manpower utilization.
Train kitchen assistants and production staff.
Packaging & Shelf Life
Work with suppliers to select packaging.
Conduct shelf-life testing.
Recommend storage conditions.
Ensure products remain stable for retail sale.
Procurement Support
Source ingredients and packaging suppliers.
Evaluate supplier pricing and quality.
Assist procurement team in vendor selection.
Team Training
Train production assistants.
Train retail staff on product knowledge.
Develop recipe manuals and production guides.
Qualifications
Required
5+ years experience in pastry or bakery development.
Experience creating commercial food products.
Strong knowledge of baking science.
Experience with recipe costing.
Understanding of food safety standards.
Preferred
Experience launching private-label products.
Experience with shelf-life testing.
Experience in FMCG or food manufacturing.
Familiarity with Indonesian and Singaporean consumer trends.
