About the role
Milk & Madu Group (Bali) is seeking an experienced and passionate Head Chef to lead our culinary operations in Badung, Bali. This is a full-time position that offers a strategic leadership opportunity within our hospitality and tourism business. As Head Chef, you will be at the forefront of our kitchen operations, responsible for creating exceptional dining experiences that reflect our commitment to quality, innovation, and culinary excellence. This role is pivotal in shaping our restaurant's reputation and ensuring every dish that leaves our kitchen meets our exacting standards.
Key responsibilities
Kitchen Leadership
Lead, mentor, and supervise the kitchen team to ensure high performance and a positive working culture.
Manage daily kitchen operations, staffing, and service execution.
Conduct regular team briefings, coaching, and performance development.
Food Quality & Brand Standards
Ensure all dishes meet company standards for quality, taste, presentation, and consistency.
Maintain recipe compliance, portion control, and food presentation standards.
Monitor food quality and address any issues promptly.
Cost & Inventory Management
Control food cost (COGS), wastage, and kitchen expenses in line with company targets.
Manage purchasing, stock levels, inventory, and monthly stock takes.
Ensure proper storage, stock rotation (FIFO), and inventory accuracy.
Food Safety & Compliance
Maintain the highest standards of food safety, hygiene, and HACCP compliance.
Ensure kitchen cleanliness, equipment maintenance, and regulatory compliance at all times.
Implement and monitor food safety procedures across the kitchen team.
Team Development
Recruit, train, coach, and develop kitchen staff to support business growth.
Conduct onboarding and ongoing skills development.
Identify and develop future kitchen leaders.
Operational Excellence
Ensure efficient kitchen workflow during preparation and service.
Coordinate production, station assignments, and service timing to deliver an exceptional guest experience.
Maintain accurate operational records and kitchen documentation.
Communication & Collaboration
Work closely with Venue Managers and Front of House teams to ensure seamless daily operations.
Report on kitchen performance, staffing, food quality, inventory, and operational improvements to the Executive Chef.
Support continuous improvement initiatives across kitchen operations.
What we're looking for
Minimum 3–5 years of experience as a Head Chef or Senior Sous Chef in a high-volume hospitality environment.
Proven experience leading kitchen operations, including team management, food quality, inventory, and cost control.
Strong understanding of food cost (COGS), portion control, stock management, and wastage control.
Sound knowledge of HACCP, food safety, sanitation, and kitchen compliance standards.
Excellent leadership, communication, coaching, and team development skills.
Ability to work under pressure while maintaining high standards of quality and consistency.
Proficient in kitchen operations systems, including rostering, ordering, and inventory management.
Able to work in a fast-paced kitchen environment.
Strong attention to detail with high standards of cleanliness and organization.
Good command of English; Bahasa Indonesia proficiency is an advantage.
