About the role
We are seeking an experienced and innovative Head Chef to lead our culinary team at Vince Restaurant, located in Jakarta Utara. This is a full-time position that plays a critical role in defining our restaurant's culinary direction, maintaining exceptional food quality, and delivering outstanding dining experiences to our guests. As Head Chef, you will be responsible for menu development, kitchen operations, staff leadership, and ensuring that every dish that leaves our kitchen reflects our commitment to excellence and creativity. This role offers the opportunity to showcase your culinary expertise whilst leading a talented team in one of Jakarta's vibrant dining destinations.
Key responsibilities
Develop, create and refine innovative menus that reflect current culinary trends whilst maintaining the restaurant's signature style and quality standards
Oversee all aspects of kitchen operations, including food preparation, cooking techniques, plating and presentation to ensure consistency and excellence
Lead, mentor and manage the kitchen brigade, fostering a collaborative environment that encourages professional development and high performance
Maintain rigorous food safety and hygiene standards in compliance with local health regulations and the restaurant's policies
Monitor food costs, portion control and waste management to optimise profitability whilst maintaining quality
Source and select high-quality ingredients from suppliers, building and maintaining strong vendor relationships
Train kitchen staff on food preparation methods, plating techniques and the restaurant's culinary standards
Collaborate with management on strategic culinary initiatives, special events and seasonal menu changes
Conduct regular kitchen inspections and implement continuous improvement practices
Manage inventory and ensure adequate stock levels of ingredients and kitchen supplies
What we're looking for
Minimum 8-10 years of professional culinary experience, with at least 3-5 years in a Head Chef or Executive Chef leadership role
Formal culinary training from a recognised culinary school or equivalent hands-on experience in fine dining establishments
Proven expertise in menu planning, recipe development and modern culinary techniques
Strong knowledge of food safety, sanitation standards and local health regulations in Jakarta
Exceptional leadership and people management skills with the ability to inspire and develop kitchen staff
Excellent organisational and multitasking abilities in a fast-paced kitchen environment
Creative flair combined with a commitment to consistency and quality in every dish
Strong communication skills and the ability to work collaboratively with front-of-house and management teams
Cost management and budgeting experience to control kitchen expenses without compromising quality
Fluency in English and Indonesian (both written and verbal) is highly desirable
Passion for culinary innovation and staying abreast of international food trends
