Kualifikasi Umum:

Keahlian Teknis:

  • Bread: Menguasai pembuatan artisan bread, sourdough, viennoiserie (croissant, danish), roti manis isi, dan gluten-free options.
  • Dessert: Mampu menciptakan dessert modern (plated dessert, jar dessert, cake slicing, mousse, panna cotta, ice cream pairing).
  • Hot Kitchen: Memahami teknik dasar memasak (sauté, poaching, baking) untuk menu pendukung seperti warm brownies with sauce, banana fosters, french toast, pasta manis, atau filling gurih untuk pastry.
  • Manajemen dapur: Pengalaman mengontrol Bahan Baku (parstock FIFO), meminimalkan waste, menjaga kebersihan (HACCP), serta mengoperasikan oven deck, proofer, combi oven, dan chiller.


Tugas & Tanggung Jawab:

  • Melatih tim kitchen (pastry cook, baker, helper) dalam teknik produksi dan plating.
  • Mengontrol kualitas setiap produk yang keluar dari dapur (taste, tekstur, tampilan).
  • Bekerja sama dengan front house untuk menyesuaikan stok dan special request.
  • Membuat jadwal shift dan memastikan target produksi harian tercapai.
