Position Summary
The Chef de Partie (CDP) – Pastry is responsible for overseeing the daily operations of the pastry section, ensuring the consistent preparation and presentation of high-quality pastries, desserts, baked goods, and specialty items that align with Reload Sanctuary's wellness-focused culinary standards. This role maintains food quality, hygiene, and operational efficiency while supporting menu innovation and guest satisfaction.
Key Responsibilities
Pastry ProductionPrepare, bake, and present pastries, desserts, cakes, breads, cookies, and other baked goods according to company recipes and quality standards.
Ensure all pastry products are prepared consistently and presented to the highest standard.
Produce healthy, wellness-oriented desserts and baked items that align with Reload Sanctuary's concept.
Monitor product freshness, quality, and portion control.
Manage the daily operations of the pastry section.
Organize mise en place and ensure adequate preparation before service.
Coordinate with the kitchen team to ensure timely production and service.
Assist in developing seasonal menus and new pastry concepts.
Ensure consistency in taste, texture, presentation, and portion sizes.
Monitor food quality throughout preparation and service.
Minimize food waste through effective production planning and inventory management.
Monitor pastry ingredients and inventory levels.
Conduct regular stock checks and assist with monthly stock opname.
Report low stock levels and coordinate ingredient ordering with the Executive Chef.
Ensure proper storage and rotation of ingredients using FIFO principles.
Assist in controlling food costs and reducing wastage.
Maintain the highest standards of food safety, sanitation, and personal hygiene.
Ensure compliance with HACCP, company SOPs, and local health regulations.
Keep all pastry equipment, utensils, and workstations clean and organized.
Report equipment issues or maintenance requirements promptly.
Supervise and support Commis Pastry and Kitchen Assistants when required.
Provide guidance and training to junior kitchen team members.
Foster a positive, collaborative, and professional kitchen environment.
Assist the Executive Chef and Sous Chef with daily kitchen operations.
Qualifications
Diploma or certification in Culinary Arts, Pastry, or a related field is preferred.
Minimum 2–3 years of experience in a pastry kitchen, preferably as a Demi Chef or CDP.
Experience in hospitality, wellness, café, hotel, or restaurant operations is preferred.
Strong knowledge of pastry techniques, baking methods, and dessert presentation.
Experience with healthy desserts, gluten-free, vegan, or wellness-focused products is an advantage.
