The Daily Worker Cook is responsible for assisting in the preparation, cooking and presentation of food in accordance with hotel recipes, quality standards, food safety regulations and Standard Operating Procedures (SOPs). Working on a daily basis to support operational demands, the role ensures timely food production, maintains cleanliness of the kitchen and contributes to delivering a high-quality dining experience for hotel guests.
Key Responsibilities :
- Prepare ingredients, including washing, cutting, marinating, and portioning food items according to standard recipes.
- Assist in mise en place for breakfast, lunch, dinner, banquets, and special events.
- Ensure all ingredients are fresh and prepared according to food safety standards.
- Maintain cleanliness of kitchen workstations, equipment, utensils, and storage areas.
- Follow HACCP, food hygiene, sanitation, and health & safety standards.
- Properly dispose of food waste and maintain a clean working environment.
- Ensure personal hygiene and grooming comply with hotel standards.
- Store food items according to FIFO (First In, First Out) and FEFO (First Expired, First Out) principles where applicable.
- Check the quality and expiry dates of food ingredients before use.
- Prevent food contamination through proper handling and storage practices.
- Report any spoiled or damaged ingredients to the supervisor immediately.
- Assist in receiving, checking, and storing food supplies.
- Monitor ingredient usage to minimize waste.
- Inform supervisors when stock levels are low.
- Participate in stock counts when assigned.
- Operate kitchen equipment safely and correctly.
- Clean and maintain cooking equipment after use.
- Report damaged or malfunctioning equipment to the Chef or Engineering Department.
- Work closely with chefs, kitchen staff, stewards, and service teams to ensure smooth kitchen operations.
- Assist colleagues during busy periods or special events.
- Attend daily briefings and follow operational instructions.
