A Sushi Store in Bali ?is looking for a talented and enthusiastic Sushi Sous Chef (Full-time)
Responsibilities:
Assist the Head/Executive Chef in managing daily sushi kitchen operations
Lead the preparation and execution of sushi menus, including nigiri, sashimi, maki, and specialty rolls
Ensure consistency, quality, and presentation of all dishes
Supervise, train, and mentor junior kitchen staff
Monitor stock levels, handle ordering, and ensure freshness of seafood and ingredients
Maintain strict hygiene and food safety standards, especially in handling raw fish
Collaborate with management on menu development and seasonal specials
Take full responsibility of kitchen operations in the absence of the Head Chef
Interact with guests when required, especially in an open sushi bar concept
Requirements:
Excellent written and verbal communication in English
Proven experience working as a Sushi Sous Chef or in a related position
Strong knife skills and solid knowledge of Japanese culinary techniques
Proven leadership experience in managing and guiding a team
Good understanding of food safety, storage, and raw fish handling
Ability to work efficiently under pressure in a fast-paced environment
