Role Overview
The Head Chef is responsible for leading all kitchen operations at Kopi Kalibrantas, ensuring high-quality food production, cost efficiency, and profitability. This role oversees menu development, banquet execution (especially weddings), and kitchen team performance while maintaining consistency with the brand’s standards.
Key Responsibilities
1. Kitchen Operations & Food Quality
Oversee daily kitchen operations and ensure consistent food quality and presentation
Develop and update menus across Nusantara, Western, and Oriental cuisines
Maintain hygiene, food safety, and kitchen SOP standards
2. Costing & Financial Management
Manage food costing, pricing, and portion control to achieve target margins
Monitor kitchen P&L, control waste, and optimize ingredient usage
Work closely with management to ensure overall restaurant profitability
3. Banquet & Event Execution (Weddings)
Lead planning and execution of banquet events, with a focus on weddings
Design scalable menus and ensure smooth coordination during high-volume service
Maintain quality and consistency during large events
4. Team Leadership & Development
Train, supervise, and develop kitchen staff
Ensure team adherence to SOPs and performance standards
Foster a disciplined and efficient kitchen culture
Qualifications
Minimum 2 years experience as Head Chef or Sous Chef in a high-volume restaurant or hotel
Proficient in Nusantara, Western, and Oriental cuisines
Strong expertise in food costing and kitchen financial management
Experience in banquet handling, especially weddings
Strong leadership, organizational, and communication skills
Willing to be based in Malang
