Position Summary
Support the Head Chef/Production Manager in overseeing daily kitchen operations, ensuring consistent quality, food safety, and efficient production across departments.
Key Responsibilities
Supervise daily production across relevant departments (e.g., Bakery, Pastry, Kitchen), ensuring recipes and SOPs are followed consistently
Manage staff scheduling, delegate tasks, and step in on the line during peak periods or absences
Monitor food quality, presentation, and portion/yield control
Oversee inventory: stock counts, ordering, minimizing waste, and proper storage (FIFO)
Enforce hygiene, food safety, and HACCP standards
Train and mentor junior kitchen staff and apprentices
Support costing accuracy — flag ingredient waste or yield issues to management
Assist with new menu/recipe development and standardizing recipes
Liaise with procurement on ingredient quality and delivery issues
Ensure equipment is maintained and report maintenance needs
Step in for the Head Chef in their absence
Requirements
3–5+ years kitchen experience, with at least 1–2 years in a supervisory role
Culinary or pastry/baking qualification preferred
Strong knowledge of food safety standards (local regulations)
Ability to work under pressure in a high-volume production environment
Good leadership, communication, and organizational skills
Physically able to stand for long periods, lift stock, work early/split shifts
Nice to Have
Experience in viennoiserie, laminated dough, or artisan bread production
Bilingual (English/Bahasa Indonesia)
Familiarity with B2B/wholesale production standards
