Job Summary:

The Jr. Sushi Chef supports the Sushi Chef in preparing sushi and Japanese dishes according to quality and hygiene standards. This role is responsible for basic food preparation, ingredient handling, and maintaining cleanliness at the sushi station. The Junior Sushi Chef is expected to follow instructions well, work as part of a team, and communicate in English effectively.

Key Responsibilities:

  • Assist in the preparation of sushi ingredients such as fish, rice, vegetables, and other supporting materials.

  • Prepare sushi rice according to established recipes and quality standards.

  • Assist in making sushi items (maki, nigiri, sashimi, etc.) under the supervision of the Sushi Chef.

  • Maintain cleanliness and organization of the work area, kitchen equipment, and storage areas.

  • Ensure proper food handling, storage, and FIFO implementation in compliance with food safety standards.

  • Support quality control by checking the freshness and quality of ingredients before use.

  • Follow hygiene, sanitation, and workplace safety procedures at all times.

  • Assist with inventory checks and stock taking when required.

  • Work collaboratively with the kitchen team and follow instructions from supervisors.

  • Maintain consistency in taste, presentation, and overall food quality.

Qualifications:

  • Minimum education: Culinary School / Vocational High School in Culinary Arts is preferred.

  • Previous experience in a Japanese restaurant or sushi kitchen is an advantage.

  • Basic knowledge of kitchen hygiene and food safety standards.

  • Able to communicate in English (basic to intermediate level).

  • Willing to learn, detail-oriented, and passionate about Japanese cuisine.

  • Able to work well in a team and follow instructions.

  • Willing to work in shifts, including weekends and public holidays.

  • Able to work in a fast-paced kitchen environment.
