PASTRY & DESSERT R&D CHEF
ÉCLAT BRÛLÉE is looking for a passionate and creative Head Pastry & Dessert Chef to lead the development of premium European-inspired pastries and desserts.
Responsibilities:
• Develop and innovate premium dessert and pastry products.
• Create mousse collection, entremets, mirror glaze, tarts, cakes, and modern desserts.
• Standardize recipes and production processes.
• Conduct product trials and cost control.
• Ensure consistency in taste, presentation, and quality.
• Train and supervise pastry kitchen staff.
• Maintain food safety and hygiene standards.
Qualifications:
• Minimum 2 years of experience in pastry and dessert production.
• Strong knowledge of French and European pastry techniques.
• Experienced in mousse collection, entremets, mirror glaze, tarts, cakes, and modern desserts.
• Creative mindset with strong product development skills.
• Familiar with recipe costing and production planning.
• Detail-oriented with high standards for presentation and quality.
• Able to work independently and lead a team.
• Experience in premium bakery, pastry boutique, hotel, or dessert café is preferred.
Preferred Skills:
• Seasonal menu development.
• Premium dessert plating and presentation.
• Experience launching new pastry concepts.
Location : Kebayoran Baru, Jakarta Selatan.
